On the letter for the interview it states that we should bring I864 unless already submitted. We sent out packet in sept 2005 so should we have a new one? I was just thinking of taking a copy of the one we already submitted and also my husband works now so do we even need a co sponsor anymore?

Your situation has changed from when you filed, so I would prepare a new I-864 and bring this to the interview, aswell as the one already submitted. Let the Officer know that your situation has changed and he will decide on the issue of co-sponsor.

Also ask your husband to get a letter from his employer stating when he started, his position title and his rate of pay. And he'll also need 2 months worth of payslips for the interview.

Yup, you want all of that. Of course, my question is, what happens if he's only been working for <2 months?

I agree with all of the above..definitely bring an updated affidavit since your information has changed, and ALSO, DO bring your cosponsor info for sure..they will decide if they want it or not. If they don't, then get rid of it and not a problem..but if they do, then you're covered. Best wishes to you! M.
