I know but then you just explain to the officer that you were unable to get it from the company. It's not uncommon especially dealing with big corporations. Remember that the paystubs are primary evidence of the salary. :)

I agree with this too. We did a cover letter listing (which we printed off and uploaded online) what our evidence consisted of and on it we also explained for any evidence we didn't have the reason why. The ISO never said anything to us about this but as @Edward and Jaycel said, if they do ask you then just explain to them the reason why you haven't been able to provide it.

One of the most helpful pieces of advice we got was to read aloud the Yes/No questions from Part 9 on the I-485 and answer them as it's very different hearing them asked to you verbally and having to answer than it is to just read them and answer them in your head. This helped Jaycel immensely during the interview when the officer asked about 20 of the questions to her. By that point, she was familiar with them from our practice sessions and was very comfortable answering them.

I know relatively speaking it's still pretty early for my wife and I, but just curious, are there any escalate/inquiry timelines for an interview decision? For example, like you can only inquire/escalate after 60, 90, 120 days, type of thing.

You can find out the exact date by going to the processing times page. Put your relevant information in, then scroll down the page, add your receipt date and hit the 'get inquiry date' button - https://egov.uscis.gov/processing-times/
