If her tourist visa is approved. Congratulations! Now she is able to visit the US (at the discretion of CBP) while you wait for the spousal visa.

I can’t seem to find info on the AP.  Can you send me a link to explain how that works? Once she gets AP and leaves, how long can she leave for and must she then wait outside the US until green card is approved? Thanks!

And read through instructions for AP here.

AP is the document that allows an adjustment of status applicant to leave the US without abandoning their AOS. 

If your partner decides to adjust but  1.) doesn't apply for AP or 2.) leaves before they receive AP 

They have to wait outside the US and consular process.
