If lets say my interview was in Feb 2022 but I file my taxes at the earliest chance (say Jan 2022), can I use these updated 2022 taxes at my interview instead of the 2021 taxes i previously submitted?

You can't use 2022 taxes yet because those will only be filed in early 2023.  But you may use your 2021 tax paperwork if you already have it at the time of the interview in 2022.

Correct.  The next tax return to be filed is the 2021 tax return filed in 2022.  Tax returns are labeled/named/numbered based on the year the income was earned, not the year of filing.  That said, the word "use" in this context can be confusing.  Affidavits of support require information from tax returns.  Only for the "self employed" is the most recent tax return used to determine "current income".

Perhaps the OP is just asking if they can take a copy of the 2021 tax return to the interview.  If so, yes.  If there's something more to the question, they need to elaborate.
