Her passport expires March 2022, wondering if she should get it renewed before the interview, if it happens? The approved petition as been at the NVC since May waiting for the embassy in Bogota. If we do get it renewed, what actions do I need to do and with whom; NVC, USCIS, the embassy? I’d hate for her to get to the US with only six months left before it expires.

Your fiancee just needs to provide the updated passport information in the DS-160 form.  If she already submitted the DS-160, update it with the new passport details at the embassy when she goes for her interview.

I'm sure the Columbian consulate in the USA could assist in a passport renewal
