Our AOS interview is coming up on the 24th of September and I'm a little confused what to do afterward in terms of the ROC. We will have been married a year on October 5th. When should I file for ROC and do they do another interview for it?

When you pass the AOS interview you will receive a 2 year Green Card. When the 2 years comes up you can file for ROC 90 days before it expires. No one can say if you'll have a ROC interview or not. Some so and some don't and also policies can change within that timeframe also.

It has nothing to do with your marriage date. When he gets his greencard, it will expire in 2 years. Apply for “renewal“ (which is removing conditions) anytime starting 90 days before it expires. Start saving things now in preparation for that application. It should contain “joint” things with dates in 2020, 2021, and 2022 to show you were together that whole span of time. It would be rare to interview.
