K1 delayed interview, and subsequent problems

My fiancée and I have a pending K1 fiancé visa, and like many people we are waiting for her final interview. Originally we had planned on getting married in April. This time was going to work out quite well because her parents had tourist visas, and would be able to come over with her for the wedding.

Unfortunately due to the delay, their tourist visas are going to expire before she can have her final interview, making it impossible for her parents to attend the wedding. My question is this. Even though the Embassies are not conducting interviews, could we apply for new tourist visa and just wait until they resume interviews for her parents to have their interview? Is this something we can even apply for right now? Is it possible to extend or renew their current visas?   What if any are our options?

B Visa applications are pretty simple, they apply, now whether there is much point looking at it until the Consulates are undertaking interviews is another issue.

Yes you can apply now and wait for embassies to reopen. The visa fee paid is valid for a year. I guess the advantage of applying now is being able to quickly pull the trigger on an interview date when embassies reopen, other than that I can’t see It makes a difference.

Bear in mind embassies may reopen in stages for different visas so they may not be able to get a B visa interview immediately even after a reopening. (Example one embassy is opening next week only for IR/CR1&2 visas, another indicated it would give priority to student visas when it opened for non immigrant visas due to timing of school year)
