After the interview, pending the acceptance of my wife's visa, i'm aware that there is a period of 6 months where the visa remains valid to immigrate to the US. Is there any way to extend that 6 months if im unable to accompany my wife during this time of limited international travel?

It's in the embassies/ consulates discretion to re-issue the visa. In order to do so you'd have to do a new medical, pay the visa fees and do the interview again. You should contact the embassy/ consulate if you won't be able to make it.

please note that these 6 months may be from the medical, not the interview.
