So it has bee 2 days since my interview and the approval of the K1 Visa. I was told by the officer that he is ready to approve it and i would receive my passport within 5-10 days. However, after checking the status on the visa status tracker it just says  "Application Rceived" and "Your case is open and ready for your interview, fingerprints, and required documents. If you have already had your interview, please check your status after two business days. If no interview was required, please check back in two business days for the status of your application.

For more information, please visit U.S. Consulate General Frankfurt."

Is this normal?

Visas are not approved until the status changes to "Issued".  Your status could change to "Administrative Processing", but hopefully, it will change to "Issued" quickly.....good luck.
