SSNs are valid for your lifetime

You can update it after you get your EAD if you are filing the AOS forms with your new last name. (You can't change any other part of your name).

The SSN is the same. They don't change it, that's why you need to protect it as much as you can.

 

That will be a whole other question if you are eligible for a state ID or not before getting the EAD or work permit. For sure you can get a state id on the K1 visa, but that will expire within 90 days. (I-94 expiration date)
