Of course. A lot of people travel back to see their fiance(e)s during the process. I traveled a couple times for work. Doesn't matter at all. You're a USC, you can do whatever you want.

Same as the beneficiary can travel to the US if they can even during the process.

11/23/2016 : POE - Dallas, Texas

From sending of I-129F petiton to POE - 146 days.

 

02/03/2017 - Married 

02/24/2017 - AOS packet sent

06/01/2017 - EAD/AP Combo Card Received in mail

12/06/2017 - I-485 Approved

12/14/2017 - Green Card Received in mail - No Interview

Would the beneficiary need some type of visa to travel here while the K1 is processing ? When he goes for his interview, would they question him why he left the country ? For some reason I always though it would be a problem if he came to the US while all of this K1 processing was going on !

Of course the beneficiary would need the proper visa or VWP to visit the US. Also they would still undergo scrutiny when entering from immigrations; but it can be done.
