Is the visa expiring (completely irrelevant) or the stamp you got at the entry expiring (relevant - go get new one) ?

CF1 is the conditional Green Card for Fiances.

They are not suppose to re-verify a green card, you are legally still allowed to work. Your status is the same. You need to address this with the employer. They seem confused.

Your NOA1 also serves as an extension letter for 1 year together with the green card. It was unclear if it was your card only that expired or also the extension letter. These are still only documents that show your status, them expiring doesn't affect your actual status or ability to work.

 

Edit - after reading, I saw the word "potential", so they are not re-verifying, it's a first time verification. In that case the rest still applies - your green card and extension letter is proof enough. If  the letter is also expired you can go to your local USCIS office and ask for a i 551 stamp, that gives another 1 year extension.

Just checking: do you have a valid driver's license and an unrestricted Social Security Number? If so, you may use just those 2 documents on your I-9 for verification. (and not use any green card at all) They are not legally allowed to tell you which permitted documents to use. 

I don't know if Texas allows you to have a full term driver's license with a conditional green card, but if they do, that's the way to go.
