These are really easy things you can do and you really should do, even if you weren't applying for any immigration benefits.

I have a question regarding this - if the wife is waiting on a CR1/IR1 visa to be approved, how can we add them as a beneficiary without an SSN or is it not required?

There is a form for countries with tax treaties with the USA (like Canada) called a W8-ben which allows the addition of non-resident aliens.
