Do i have to get it straight away? Or is there a certain amount of time i can drive with my existing license?

Yes you are limited on how long you can drive with your Australian license. Best to contact the DMV to see what the time is.

 

Also, before you can obtain a US in the states you may have to have some kind of status (meaning after you AOS). It is one of the downfalls of the K1 and it is never consistent because it is at a state level. Some people are able to get a DL with their EAD/AP and some have to wait until they receive the actual green card.

Here's another link that shows the required documents you'll need.  Since a K-1 visa is a non-immigrant visa that converts to an immigrant visa, I'm not sure whether you should follow the requirements of the section for Immigrants or Non Immigrants.  It might be best to contact the Florida DMV and ask.  In any event, the required documents will determine when you can apply for a license.  If you have to have a valid Form I-94, then you'll have to apply before it expires (90 days after you enter the country).  If you have to have a valid Form I-551 (Green Card) then you can't apply before you have that.
