So me and my fiance have only met once. But we do communicate by emails and text EVERYDAY, ALL DAY.  I have two school age children so its not easy or financially possible to fly to Italy for visits. So when we plan to see each other, it will always be him who will have to travel to me since he is more free to move around than me.

When he came we was so excited to finally see each other that we only have maybe 2 or three pictures together. We did go multiple places together but either he paid or I paid.

The question is do we have enough supporting evidence to show that our relationship is real and genuine?
Do I need to apply for a wavier for meeting each other in less than 2 years

Help!!! I'm driving myself crazy and stressing out

No waiver, you met once within the last 2 years and that is enough.

Send a selection of emails from the start of the relationship to now,  phone bills etc. Make sure he knows all about your kids, he will be asked; evidence of him and them talking (emails, ideally photos together) will help too.  It would help if he can visit a second time during the process, and perhaps you go to see him in time for his interview, though if he is an Italian living in italy, that is a low fraud country so one visit may be enough.
