I know that whatsapp messages are good evident, but thing is, my husband and I have at least 3 years worth of messages as evident, can I actually just print out a section or do I Have to print out all of them? I just don't want to waste too much ink and paper.

Take screen shots a few a month. Make sure to include the dates that are visible at top. Put 6 per page.

I did this for my husband and I. We didn't have three years worth but between that and Skype it was majority of our packet.

Oh gosh no. You just need to show the general duration of the relationship and ongoing communication, they certainly aren't going to read word for word 3 years of text unless they're very bored...and they're too busy to be that bored. Just print a few pages here and there over the duration of the relationship.

Mostly as a thought exercise I figured out how much I'd need to print just a few months of chat and call logs between my wife and I. 4 months was nearly 800 pages. In the end, I sent USCIS groups of pages selected randomly every few weeks. I sent more from the start of the relationship and the most recent few weeks. The exceptions were eHarmony (where we met) and Skype, which I just sent the whole thing, because my wife and I only used them for the first few days we knew each other before switching to Facebook and gradually to iMessage/FaceTime. Even trimming it down our package weighed way too much, I could have probably trimmed a lot more. I did keep all the logs for myself, however, and continue to do so. I also noted I have made selections and how I made selections, lest USCIS/DoS wonder why it wasn't complete or ask for the whole thing.

Im going to pick and choose like one or more weeks from each month. I know however that from my extensive research here on VJ that almost no embassy reads chats and its almost pointless to submit them.

Do you need to include that as well? My wife and I didn't. We printed phone bills and highlighted our daily calls. Should we work on online chat/social media activities?

Every interview is different and you never know what you'll be asked. Taking every evidence you can to the interview won't hurt. It pays to be prepared.
