I'm not working right now, have unemployment. I am wondering if I can still file for a Fiance Visa, and if so could my parents sponsor?

even if you are unemployed, you are still the primary sponsor, one of your parents can be your joint sponsor

Hey I am unemployed and don't even have unemployment... I'm a student but have taken a break last 2 semesters my dad is my sponsor and I got no problem getting approved. My dad makes well over the required income and had absolutely no problems and My fiancée will take all his irs transcripts and paperwork etc day of interview.

Some US embassies allows a co-sponsor for a K-1. Some embassies do not allow for a co-sponsor.

Make sure the US Embassy in your fiance's country allows for a co-sponsor.

That'll be fine. There are a few countries, notably the Philippines that have been picky about the issue in the past.

I hadn't worked in years before our visa was granted and haven't worked in the 3+ years since. My mother was a joint sponsor and that wasn't any issue at all.

Your parent or parents must meet the income guidelines for the appropriate family size plus the immigrant. Keep that in mind.
