Once within 2 years of the date you file. Obviously, the more the better. Photos, travel itinerary, passport stamps, reservations are all best to submit.

Yep, the minimum is once, for a minute, and be able to prove it.

However, the minimum doesn't mean you get approved, it just means you may file. The more often/ longer you meet, the better for your case.

This is a two part process--1) the USCIS and the petition submitted by the US citizen, 2) the US Embassy in the beneficiary's country to grant the visa.

For the USCIS to approve the petition, you must prove that the petitioner and beneficiary have meet in person at least once within the preceding two years on the date the petitioner files the petition. Now the approved petition goes to the US Embassy/Consulate in the beneficiary's country. Each country has different requirements and thresholds for how they approve the K-1 visa. You might want to check the region forums on what Vietnam considers appropriate in order to be approved.

Yes. the US embassy in Vietnam is also very big on doing things according to cultural norms there, which usually means a big engagement ceremony.
