I'm getting my wife's AOS documents ready. I have been on my new job for 3 months making more than enough to clear the 125% of poverty line. However my income before that had been low since I was a full time student. Would this cause any issue on our process?

Make sure you included a detail statement and proof. I had the same issue and got a RFE requesting 2015 tax return. I gave them the return and wrote a statement explaining why. (biz just got started and had a loss. contracts in place, income coming in..blah blah blah) You will be fine

No one can guarantee you will be fine, but since you were a student previously and are now earning more than enough, you have a good chance to qualify without a joint sponsor. Let them know you were a student, but have now started your career and are earning more than enough to meet the requirement and support your spouse. Supply a letter from your employer and recent pay stubs.
