I have read that a DS-160 has to be completed at some point as part of the K1 process. However, I had a glance at at the form and noticed that it is an "Online Nonimmigrant Visa Application". Given that the K1 is an immigrant visa, I don't understand why we have to complete the DS-160?

Also, I have received the NOA2. but nothing yet from NVC. Would I be able to complete the DS-160 now or would it not be acceptable as it is too early?

K1 is a non-immigrant visa with immigrant intent.

Just do the ds-160, it's a non-immigrant with immigrant intent. It's not really too early, but I would do it just before I went to medical.

Once issued, the fiancé(e) visa (or K-1 nonimmigrant visa) allows your fiancé(e) to enter the United States for 90 days so that your marriage ceremony can take place. Once you marry, your spouse may apply for permanent residence and remain in the United States while USCIS processes the application.

Green Card for a K Nonimmigrant

The K-visa categories for fiancé(e)s of U.S. citizens and their accompanying minor children (K-1 and K-2 visas) were created to speed up the immigration process for such individuals so they could travel more quickly to the United States.

By allowing a fiancé(e) and his/her accompanying minor children to be admitted to the United States as nonimmigrants, fiancé(e)s can be spared a long separation from their intended spouse, while continuing their processing for an immigrant visa after the marriage takes place.
