I know the forms, the cover page, the letters of intent and the I-129F continuation page all need signed and dated but do any of the other items need signatures and dates? (messenger logs, receipts, etc.?) After this it is ready to go.

You are just starting the process, you only need evidence of having MET IN PERSON within the past 2 years. You do NOT need copies of chat logs. You should send copies of your passport pages with the entry/exit stamps (+ bio page), receipts from when IN the Phils, copies of boarding passes and pictures together.

Letter of intent and the forms need signature and dates.

I met my fiancée in Korea in 2013 while she was on a worker's visa and I was active duty military so I have no passport with stamps but she has a passport with stamps so should I send that? Also do you think I'll need copy of my orders for being stationed in Korea? She went back to the PI in April last year and I have not been to the Philippines yet. Will this be a problem?

In your case YES a copy of her passport stamps and the visa from Korea to work, plus a copy of your orders to Korea. That should about nail it.

Nope you do not need to have been in the Philippines.

I was stationed in Kunsan back in the day

Also I am including evidence of an ongoing relationship (chat logs) with this K1 visa, will this be OK? I figure it should not be an issue. I saw this in the K1 fiancée visa guide on the Guides link:

Additionally, please note that providing proof of your ongoing and genuine relationship in this package may benefit you by allowing the consulate to have access to this information prior to them formally contacting the non US Citizen fiance. Many high risk consulates approach cases with a skeptical eye and providing this information early on in the original I-129F package will help them in their preliminary review of your case.

Absolutely no reason to include copies of the chat logs... none. The guide on VJ is not the best. Manila is not a embassy you need to be concerned about. Save the chat logs for the interview later.

hello, do you know if my fiancée's daughters need to show the same last name on their new passports as my fiancée's? She is about to process new passports for both her girls and they have never had passports and she is annulled now. Thanks

The daughter's last name has to match her birth certificate.

so it doesn't have to match the last name of the mother? The last names of the children are the father's last names.

Nope, no issue having different last name than the mother. The birth certificate and the passport have to be the same name.

I paid for a visitors visa for my fiancee in June this year (she was denied the visa)but will I need to pay the fee again for the K1 visa? and pay it for her 2 children too? I was thinking yes.

Each application requires a "new" visa fee. So yes, you will pay for a K-1 and 2-K-2's.
