When do I get my social security number?

As a K-1 you can apply for a social security simply by virtue of your K-1 status, before even getting married, provided you have at least 14 days of validity remaining on your I-94. Take your birth certificate, passport (containing K-1 visa), and a completed SS-5 (application for a social security number) to your nearest social security agency office, and apply. If they give you any trouble, show them this: https://secure.ssa.gov/apps10/poms.nsf/lnx/0110211530

If you do not have at least 14 days of validity remaining on your I-94 then you'll need to wait until you have your EAD.

Drivers' licences / ID cards are handled by the state. If you're in Texas you'll need to visit your nearest Texas Department of Public Safety office to apply. Any licence or ID card you receive will only be valid up until the date your I-94 expires though, so you may want to wait until you have your EAD (because then it will be valid until the EAD expires, which will be a year from issuance).

It says I must have a reason to apply for a social security number if I am not authorized to work yet. What is my reason?

From https://secure.ssa.gov/apps10/poms.nsf/lnx/0110211530 a K-1 is considered a "legal alien allowed to work", but you still require an EAD to actually do so. You do not need a reason, and will not be asked for one.
