You can never go wrong with the current instructions found directly on the USCIS website. As the instructions state, ALL I-129F petitions are mailed to the Dallas Lockbox intake facility. The petitions are not mailed directly to any service center. When you send the petition to the Dallas Lockbox, it will be briefly checked for completeness, correct fees, and basic things like that. Your check will then get cashed and your petition will be sent to one of the two service centers currently processing the I-129F petitions. As of now, that would be the CSC or the TSC. After that, you will receive a receipt notice in the mail that contains your receipt number and service center where your petition will be processed.

Your birth certificate is not needed for the I-129F, only the petitioner's birth certificate is needed (to prove US citizenship). All you need to send your fiancé is the signed G-325A with passport photo, and a signed letter of intent.

Proof of having met in person would be (from your list): boarding passes, hotel receipts, and pictures. If you have passport stamps, include those as well.

Letters, cards, chat logs, emails, western union receipts....these are all proof of relationship, but do not prove you have met within the last 2 years. You can include these as well, but don't include too much. In our petition we had about 40 pages total of chat logs, emails and cell phone records. We had absolutely no issues whatsoever with our petition or with the visa interview.

And everything can be photocopies.
