Just wondering since I haven't got my biometrics letter yet.

Also my NOA1 (AoS) has no priority date...

My wife and stepson got I-797c ASC Appointment letters (biometrics) and separate I-797c receipts (NOA1) for AOS, EAD, AP.

Completed: K1/K2 (271 days) - AOS/EAD/AP (134 days) - ROC (279 days)

Yes. I have NOA-1 for I-485 and I-765 ( I don't file I-130). You only got one biometric appointment letter to all applications you have filed for.

Priority date is not something you need to worry about when adjusting from a K-1. There should be a date on your receipt notice. That is the filing date and if you need to call the USCIS for anything, such as long processing times or an expedite, that is the date you need to know.

Biometrics letter is a separate thing from the filing receipt notice(NOA).

You wlll probably get a bio appt letter soon. I got my letter about 3 weeks after filing and the appt was about 3 weeks after that.
