We just finished the paperwork for the AOS. I will put it in the mail in the morning. I am curious what is next. Is it true it will take about 4 months to get the green card? Also, will we be required to do an interview? Should we be documenting more things?

My fiance arrived in the USA on the 9th of April and we were married the following day.

I am just curious what will happen next.

Is there a flowchart available?

Collecting evidence is not a bad thing generally until you are completely done with USCIS.

If you have applied for EAD and AP in addition to the greencard you should receive 3 NOA1's a short while after you send in your package and your check being cashed. Next your fiance will need to go to a Biometrics appointmend (have picture and finger prints taken) and then you should receive EAD / AP within 90 days, with which he can work and travel.

You might or might not have an interview before you get the greencard - time frame depends partially on if you do (without the interview it normally takes longer).

Once you have the greencard keep collecting evidence because 90 days before the anniversary of THE GREENCARD (not your wedding) you will need to apply for removal of condition, to get a 10 year greencard for your husband. (Well, you can apply from 90 days before that date but have to apply before the conditional greencard expires). The year after that - assuming you are still married, which I hope :) - he can apply for US citizenship. There are guides for all these steps on the website.

Good luck :)

You receive your 3 receipt notices with case numbers starting with MSC, and then you will receive your biometrics appointment. After that, you wait. It takes about 90+ days to receive the EAD/AP after filing It can take the green card 4-10+ months. You have a 50/50 chance not to interview when adjusting from a K-1. You should collect evidence of your marriage not only in case you have an AOS interview, but it will be needed later for ROC too.
