In 2013, I worked a part-time job and I did not meet the 125% poverty guideline on my 2013 W-2.

Since then, I've gotten a full-time, permanent job that exceeds the 125% limit and submitted my K-1 petition.

My petition was delivered February 22nd and I begin the new job February 27th.

Will I need a co-sponsor because of my insufficient income in 2013 or will my new job with sufficient income be enough to be approved for a K-1 visa?

By the time I receive an NOA2 and begin filing the Affidavit of Support, I'll have many pay-stubs, but I'm still worried that I could risk getting the visa denied as a result of last years income and not working at my new job long enough.

This really depends on the consulate and mostly the CO. They have sole discretion for accepting the I-134 or not. If they believe the beneficiary will not become a public charge, then they will approve you. There is not really any set amount of time you must have held a job in order to get approved. If your current income is well above the requirement and not borderline, barely above, then your chances are probably greater for an approval without needing a co-sponsor.
