K-1 , I-129F form

Please advise,

when submitting the I-129F package/form, does my fiancé have to send proof of ID(passport/birth certificate)?

And if so, is a passport enough?

I cannot seem to find anywhere that says she must produce any ID.

Petitioner has to send copy of birth certificate or copy of all pages of passport to establish citizenship

Correct, beneficiary does not need to send birth record or passport at this stage. That will come later.

I sent in a copy of my Canadian passport, but mostly as evidence to support the "meeting in the last two years" requirement. I made reference to the specific passport pages within that section and attached it to the end.

Your fiancee I'm assuming is the beneficiary? The beneficiary does not need to submit any birth certificate, passport, or any ID for that matter.
