For the immigrant, I would think so due to the not being a public burden clause, but it all depends. There are emergency exceptions listed on the I-864P. It would depend the scenario.

We used emergency medi-cal for my wife's pregnancy because her blood pressure sky rocketed up to 210/190 and was that way for 36 hours straight. They had to take the baby out at 7 months via c-section. We were told it would be a problem with immigration due to its emergency status.

You mean "would not be a problem", right?

would using public aid cause adjustment of status denial ?

I think it depends on what kind of aid. If you look at the USCIS page for Public Charge, it says that generally only cash benefits are considered "public charge"; and things like Medicaid, WIC, CHIP, and other non-cash benefits are not considered "public charge".
