My point of view:

Bank Statements 3 o 2 mo. should be fine.

Bank letter stating when you started joint in the account.

Rent contract or mortgage, show payments with both names.

Utilities joint, you can ask the company to send you a letter stating you are joint in the account.

Bonna Fide Marriage letter notarized (2 should be good) from family members or friends who know the relationship

Tax Returns filed jointly.

Pictures labelled and dated- 10-20 pics of important events should be fine. Do pictures with people not just couple.

Letter explaining how you met.

This is almost dead on to what I provided

However a lot of these things are not available to newlyweds in different countries from each other.

Do you have health insurance cards or anything that shows eachother as a beneficiary such and life insurance policies or 401k's? Do you have cards you have given eachother on holidays such as valentines that profess your love to eachother?

I'd focus on 'since the marriage date'. Not before, as you've been married 3 years already.

Do you know if sending copies of my kids birth certificates is good? Or does it have to be the originals? Also do I have to send my wife's birth certificate? When I submitted the i130 I only submitted a copy of mines.

Your children's birth certificate is good, as long as both your names are on it. And it's not required but I'd send your wife's birth certificate as well, a lot of people are getting requests for it. Make sure you translate it if it's not in english and attach a certification signed by the translator. When you're sending stuff for the I-130 send copies, don't send originals. Originals are only required for the NVC stage.
