If you just can't take it any more and need some chocolate. Try any brand of chocolate cake mix. Low fat if you can find it. One can of pumpkin and a few table spoons of water just to make it easier to mix up. 13 X 9 pan and bake like reg cake. I like to keep it in the fridge and top off with non fat cool whip if you want. I swear you will love it and you can't taste the pumpkin.

You can also do the same thing with a can of diet soda. Any flavor cake mix and any flavor diet soda.

They have over 200 calories a cup, but that's a LOT of black beans. The recipe I posted is about 8 servings.

Here are some ideas -- some may have already been mentioned:

Cook with olive oil instead of butter. A touch of butter on toast or in pasta is ok, but you do not need it for sauteeing, broiling or baking. Extra virgin olive oil is actually incredibly tasty! Also, yes, stay away from deep frying anything.

Buy lean cuts of meat or fish, and serve them with brown rice, vegetables and salads. One "diet" trick here is to eat salads and veggies before the main course, which will help you feel full quicker. A note on the salads: use store-bought dressings with extreme caution. Even the low-fat ones can cause damage, since they contain lots of sugar. Drizzle your salad with olive oil, rice vinegar and soy sauce for a tasty dressing.

If you get a craving for sweets, a few squares of chocolate (the darker, the better) are much better than cookies or cakes. If you want ice cream, try frozen fruit instead.

Eat pieces of fruit instead of drinking fruit juice. When you are thirsty, drink water instead of soda or juice. Drink plenty of water every day!

There is no quick fix for eating healthy, I'm afraid

The unhealthy stuff just tastes better. I have been trying to drop a few pounds and have been taking carrot sticks to munch on when I get hungry at work and having a big salad for dinner, but would I rather be munching on Oreos at work and steak and fries for dinner, damn right I would.

If you can eliminate refined sugar from your diet, your tastebuds will begin to taste flavors in veggies and fruits better.

I didn't feel like reading all the pages before responding, incase this seems off track...

Along with exercising, I want to start cooking us healthier foods. Unfortunately, I've always been in the same mode of cooking...things that are generally too buttery or 'heavy'. When I look at low-fat cookbooks, slow cooker recipes, one-dish casseroles, or things like that, I usually get frustrated quickly because the recipes tend to be 'fancier' than something I would normally cook, or require ingredients I don't have on hand. Do you know what I mean? Why can't anyone come out with a low-fat "normal" people's cookbook???

Does anyone have any ideas for me? I know fish/chicken are good for you, if they are cooked correctly, and I'm sure other things can be as well....

I'm looking for "normal" foods...suppers, etc. Different types of salads would be great too....Craig has always like pasta salads...any type of cold salads the best...and he is much better at eating healthy than I am already. Would appreciate any/all ideas...

When Sujeet and I got married, and when we moved into our own place, it was a big adjustment for me cooking since he is a vegetarian. It's so hard sometimes for me to think of vegetarian meals every night of the week. They have to fill you up, and not be boring, and not be repetitive. Overall the meals are healthier compared to typical American dinners.

Some things I make:

Vegetable stir fry with rice noodles on the side...I just use a small amount of oil in the pan. The seasoning makes it taste great. It can have a Chinese flavor or Thai flavor depending on the spice mix. You can buy spice packets at the grocery store for this. You can add in boneless skinless chicken easily. They also sell frozen vegetables in packages like a stir fry mix, which you just add flavor to.

I'm on a fish kick lately, but can't cook fish dinners since it'd be wasted, but I eat it for lunch sometimes. Gordon's had frozen filets (that you bake in the oven) that are grilled. They are very low calories yet are smothered with flavor.

If you get fish filets, you can chop lots of garlic, and put garlic and pepper on the filets with a tiny bit of olive oil and bake them, and top with lemons. It makes me salivate just thinking of it. hehe.

I also use olive oil often instead of regular oil or butter, unless it would drastically alter the taste.

I think it's best not to deprive oneself suddenly of everything you like. That will cause bad cravings. It's better to slowly find things that are healthier to replace the unhealthier. And I don't believe that natural things, such as a type of fruit, have to be avoided completely. If it's fattening or full of sugar, just don't eat it all the time. But I don't believe in totally cutting out any food unless it's some chemically altered crazy thing or something like trans fat.

I am not a health freak at all, but I am also learning what to eat and what to eat less of or avoid completely. And I don't avoid chocolate, which I love...I don't avoid other things I love as well. I just eat less of it. Otherwise, I would crave it too badly which would make me want to overdo it if I got the chance. I don't see any harm in eating a small piece of chocolate everyday if someone needs to fill a sweet tooth. If it's ALL day, then it's a problem. And eating something you love slower will satisfy you and possibly you won't crave more right away, like a piece of chocolate.

Indian food, if made healthier, can be a good substitute for certain things IMO. The spices add sooo much flavor, which means adding less salt, and adding less fats like butter. But if you don't like Indian food, nevermind. :P I have an Indian cookbook called "Healthy Indian food" or something like that, that gives all the tips of lower fat meals and tells you how many calories/grams of fat/etc will be in each recipe.

That's just my tidbit of info. :)

I like to get filets of haddock or tilapia from the grocery store, brush them with a paste of coriander chutney with chipotle spices and stick them in the oven at 350 for about a half hour. I like it but my wife doesn't.

I'm no expert, but I don't know why there is such a phobia of potatoes these days in the public of people who are trying to lose weight. :D I understand they are full of carbs and sugars...but I don't really get it. I don't believe potatoes are so harmful, but it's everything else we add to them. I know many would disagree, but I'd say...explain this to me:

When I went to India, I ate 3 meals a day which usually consisted of some type of flat bread, a potato dish, dal(lentils, another carb), ochra & cauliflower. I lost 5 lbs in 2 weeks. I didn't try to lose weight. But I did naturally from the Indian diet. If I ate the same exact way in the US, I'd lose much much more weight. And it was mostly carbs there. So then why are potatoes so evil? I just don't think they are. :no::lol:

Probably because when asked "butter and sour cream with that?" I alwayssssssssss say YES, please! ;) So, in other words, you're right. It's what we put on them that matters.

PS..I lost nearly 10 pounds after two weeks in England. Just speaking for myself, I determined it was because we walked a lot there, and I drive everywhere here. I didn't see it as any form of exercise, of course...we were just strolling, looking at things, etc...but I got a LOT more movement there than I do at home...and I pretty much ate whatever I wanted to!! So, to me, exercise is SUCH a huge key.

I think the most important thing is portion control. Re: the black beans....I think a lot of people could have the tendencey to be all 'it's healthy! eat up!'

I once told my boss 'just cos they're fat free doesnt' mean you should eat the whole box'

That sounds good!!

But stews/curries taste better when the bones are NOT removed.

We've actually tried filet, iced-fresh (whole) and freshly-killed (chosen from a tank of LIVE fish). Though the iced is easier to cut, nothing beats the taste of live (has to be prepared same-day).

Gupt, have you considered visiting Korean or Chinese store and picking live tilapia?

Sautee (sp) your vegetables in olive oil or blanch them in boiling water for a couple of minutes. :star

If you really want to go healthy do not use a lot of olive oil to cook with. It is not a very stable oil, and when heated can do more damage than good. It is, however, better than other vegetable oils. It is fine to use in salad dressing. I use coconut oil to cook with and my cholesterol count has since dropped through the floor, even though it wasn't high to start with.
