I am getting ready to file the I-485 form and was wondering if I need to send current copies of 1. employment letter 2. bank account summary as they were previously submitted during the initial K-1 process. Would submitting the previous copies dated a few months ago be acceptable or do I have to get new statements from my work and bank?

No bank statements needed but you need some tax transcripts. And I would play safe and ask a new employment letter to the employer. That's what I did in fact, even if my husband's work situation haven't change since the K-1. That was so easy to ask for one, and so quick to receive it.. that I thought, why not have a more recent one? :P

If your position and salary have not changed, the letter from your employer is probably still fine to send. If the bank statements were to prove assets, then get updated ones.
