It does not matter if your petition is sent to CSC or VSC as far as I am aware. I have heard of one CS being overloaded and petitions being sent to the other CS. Where the petitioner starts the petition generally determines where it is sent, for example, my fiance started the petition from Minnesota and our petition was sent to the CSC.

That's not 100% right Sometimes petitions from West are sent to Vermont and sometimes petitions from East are sent to California

Ok I read a few times in the past 5 months about people being processed / moved to a different Center , whether it is to do with an overload of the petitions in one Center or for some other reason. Also I don't know how New Mexico ended up as being East of the country and we are being processed in Vermont so a statement that East is Vermont and West is California doesn't really represents the fact for me that's all

Yes, during AOS I was transferred to California but I still had to file with Vermont. It isn't a straight divide of east and west either. I don't know why they don't have this information available to people when they file. Here are the addresses for ROC, which is much later down the line. This should still be the same for K-1 etc.

my fiance sent our I-129F form to the dallas dropbox in jan, unfortunatly we have not received any information back from any of the service centers that it would have been sent to, not even an NOA-1, its starting to get depressing as its now june and not looking good for us as we have no idea whats happening.

You haven't had an NOA1? Your fiance should have got that within a month of sending the application. The NOA1 is a receipt saying they have received your petition, if you haven't had that then either they didn't get the petition or the NOA1 was lost in the mail. Was the check cashed? Has your fiance tried calling USCIS to ask about it?
