Does anyone know what the chances are for a B1/B2 adjusting status while here.

Can they go home and do a CR-1 petition if denied AOS?

I've no idea myself.

Seems to me the chance of a successfull AOS would be VERY low as LOTS of people would be going for it!

If a SPOUSE, not very good, if married BEFORE comming to the USA, there is clear intent to immigrate, and should do CR-1.

The OP was asking about their parent who has been here in the USA for some time as a visitor, in the case of a parent, they can adjust without the proof of Immigrations Intent, they came for a visit and after being here they decided to adjust status.

For a spouse this is clearly noted in the guides. SEE:

If you are already married, and your spouse came to the US on a tourist visa with the intent of immigration and marriage, then he/she should return to his/her home abroad, and the I-130 (or along with an I-129f for a K-3 Visa) should be filed with the relative outside of the U.S. to avoid denial, deportation, or even being banned from re-entry to the US.

And we are DONE!

Yesterday I took Mom in and once started the interview lasted about 20 minutes with simple, basic questions. Should receive the Green Card in about a month.

It is indeed! Wifey and daughter have their US Passports so the 3 of'em can come and go between here and China as they please.

Next is getting Mother an SSN, Medicare coverage and Texas ID card.
