do you guys put ketchup in your brown stew chicken?

of course :thumbs: but you can't overdo it, too mush ketchup will make it too sweet and you won't taste the seasoning :whistle:

Here is mine:

3 lb. Chicken

2. 1 stalk scallion

3. 2 cloves garlic (chopped)

4. 2 cups water

5. 1 tsp. Salt

6. 3 regular sized carrots

7. 1 c. soy sauce

8. 1 sprig. thyme (chopped)

9. 1.5 tablespoon vegetable oil

10. 1 medium onion (Chopped)

11. 2 Tomatoes (diced)

12. ½ oz lime juice

13. 4 tablespoon ketchup

14. flour and dry jerk seasoning, mixed

Preparation

* Wash the chicken in water with the lime juice.

* Clean & cut chicken into small pieces.

* With the exception of the flour mix, oil and ketchup, combine the chicken and all the other seasonings-including soy sauce.

* Rub all the ingredients into the chicken and allow to marinate for a few hours (even overnight, if possible).

* Remove the tomatoes,scallion and other easily removed seasonings from the chicken and place in a bowl.

* Heat the vegetable oil- toss chicken into flour mix, and fry all the chicken pieces until brown.

* Add all the seasonings in the same saucepan along with the tomato ketchup and carrot.

* Add water

* Cover and cook over medium heat until tender.

Sus...my husband loves my brownstew chicken...every night he will eat it if I'm willing to make it. I will say what kind of chicken do you want tonight baby...he will say..."mi nuh tuh fava curry...fried...pan chicken right yereso baby." To which I will reply so that leaves brownstew chicken again.

My receipe is the same as yours minus the flour mixture.

Here is a great recipe for rumballs since the Holidays are approaching... My picture was featured in the Jamaica Eats Magazine last Spring.

Rum Balls

1 1/2 cups (140 grams) toasted pecans, finely chopped (hazelnuts, walnuts, or almonds can be used)

1 1/4 cups (120 grams) finely crushed shortbread or vanilla wafer cookies

1/2 cup (55 grams) confectioners sugar (powdered or icing)

2 tablespoons (12 grams) cocoa powder (can used Dutch processed or regular unsweetened cocoa powder)

2 tablespoons light corn syrup

1/4 cup (60 ml) rum

Garnish:

1/2 cup (55 grams) confectioners sugar (powdered or icing), sifted

To toast nuts: Preheat oven to 350 degrees F (177 degrees C) and have rack in center of oven. Place the pecans on a baking sheet and toast for about 8 minutes, or until lightly browned and fragrant. Let cool completely and then either chop up finely with a knife or place in your food processor and pulse until finely chopped. Transfer to a large bowl.

Process the vanilla wafer cookies or shortbread cookies in the food processor until finely ground. Add the crumbs to the finely chopped pecans. To this mixture add the confectioners sugar and cocoa powder and stir until combined. Add the corn syrup and rum and mix well. Chill if necessary and then shape into 1 inch (2.54 cm) balls. Place the sifted confectioners sugar into a small bowl and roll the rum balls in the sugar.

Store in an airtight container in the refrigerator. These are best if made several days in advance of serving to allow the flavors to mingle.

Serve at room temperature.

Makes about 4 dozen (48 rum balls).

1 small pkg. vanilla instant pudding

Sauce:

½ cup butter

1 cup sugar

¼ cup water

¼ cup rum

Cake: Beat all ingredients together with mixer 4 minutes on medium speed. Butter a bundt pan. Bake cake at 325 degrees for 50 minutes.

Sauce: Combine butter, sugar and water in a saucepan; boil for one minute. Remove from heat and add ¼ cup of rum. Pierce cake with fork and drip hot mixture over cake while still in pan. Let cool. Best served the next day. Serves 10 to 12.
