Timeline

I do have proof of employment listing the rate for ONE of my jobs (yes, Plural).... and even if I just use this one, it would be sufficient for meeting the poverty guidelines. Is this okay to submit just this one.. or should I gather letters from other places of employment?

Also, another note regarding the proof I do have: it is for a 3-month contract (I have current -- dated today) and the prior one.

Well, yes and no. Of course if it is sufficient, there is no problem. But you have to attach the previous years tax return which will show a higher income and w-2s from multiple employers. I guess I would state a combined income figure and attach a sheet to explain two or more jobs. But I am like that.

You want to reassure USCIS that you are in a position to meet the financial obligations - not just now, but in the future. A 3 month contract means that there is an end to the contract and if USCIS realizes that you may be asked to send additional evidence. If it is were me, I would send them more evidence - proof from your other employment - to show that you are well able to meet the financial commitment, not just through one contract, but that you have on-going contracts. You want to make it as easy as possible for them to say yes, so the more information you can provide them, the easier it is for them to approve you. Don't skimp on the paperwork - a little bit more effort now may make it a lot easier for you in the long run. Good luck.
