A K-1 visa holder can apply for a SSN anytime between day 1 to day 76 of entry.

YMMV

As long as all her information has already been entered in the system by the USCIS, she can go get her SS# until 2 weeks before her I-94 expires.

Not sure if this is what you mean, but a mailing address has to provided on the SSN application.

RM 00202.110 Form SS-5 Item 2 — Mailing Address

https://secure.ssa.gov/apps10/poms.nsf/lnx/0100202110

RM 00202.110 A Policy

A correct, complete address is needed to mail the SSN card. The correct ZIP code is especially important as it is used to determine the “area” part of the assigned SSN.

From and including: Saturday, October 25, 2008

To, but not including : Friday, January 2, 2009

It is 69 days from the start date to the end date, but not including the end date

I sure wouldn't wait that long to apply for the SSN. I would have her go apply November 10th, which is after 10 working days from when she arrived.
