Can/should change interviewing embassy while traveling?

We received form I 797c in october 2014. We chose her home country Vietnam as the interviewing embassy, but next month we are going to South America to travel long term. I do not want to return to Vietnam, as it would be costly and inconvenient for each of us, thus I would like to perform the interview at an embassy in south america. Trouble is, I have no idea when the interview will be and therefore cannot predict which country we will be in when the time comes. I am thinking Ecuador as it seems to be the easiest for her to gain entry.

There is nothing for us in Vietnam and I really want to avoid flying the two of us all the way back here just for a 30 minute interview.

She needs to be legally resident in the country she interviews, a tourist visa won't do....

I'm afraid you cannot just pick and chose the embassy to be interviewed at which is more convinient for you.

She can only be interviewed in a country where she is a resident and not just visiting.

She will have to go back to Vietnam.

You should email to the consulate of the country, where you want to do your interview and ask. I'm going to have interview in the 3d country also. , I had a residence permit for two years but now I'm on a visa. I inquired by the consulate if I can do it and I've got the answer, "since I don't want to change my decision for my home country, I can do it in China"

Guayaquil has a reputation as a ballbuster embassy too. So no benefit there changing from HCMC. However, as Kha is not a native they may handle her differently than the locals. As with any embassy/consulate is is a good idea to read the reviews here on VJ.

Get her legally resident and then you can request the change of venue.
