No, but if you qualify on your own now, you can ask that the joint sponsor be removed from the file.  

Best to do both

If the interview date is set definitely send her with a new hard copy of a new I864 and send it along with your 2021 tax return (all attachments) and current proof of income (paystubs, bank statements, last year’s W2.  
If your 2021 return isn’t ready I’d send last year’s W2 and current proof of income.
Previous year’s tax return (2020 full return or transcript) is required with the affidavit anyway.

Since a year and your move to US the  financial documents have changed
i would do a new I 864,  your taxes ( 1040)and send all with a W2 to your spouse since the IRS transcripts won't be available in time
 
and do it fast March 8th is soon

If an interview has been scheduled, I would just take updated financial documents to said interview.
