MSC is the Missouri Service center also known as NBC National Benefits Center. That's where AOS applications are processed until they're ready to move on to the Local Field Office.

When it comes to online updates there's no rhyme or reason to it. Some people get updates for every single step, others don't get any at all or one here and there. Nothing to be concerned about.

USPS can't forward GC. Your GC will be destroyed and you have to file for a new one with an I-90.

USCIS explicitly forbids USPS from forwarding green cards.   It’s not their fault your address change happened late.

The overseas medical has different validity rules:
https://www.uscis.gov/policy-manual/volume-8-part-b-chapter-3 "K or V Nonimmigrants Applying for Adjustment" https://www.uscis.gov/policy-manual/volume-8-part-b-chapter-4 "Special rules may apply to certain applicants who were examined overseas, including certain nonimmigrant fiancé(e)s or spouses of U.S. citizens (K visa), spouses of lawful permanent residents (V visa), refugees, and asylee dependents. Such applicants usually do not need to repeat the full immigration medical exam in the United States for purposes of adjustment of status." Also, the forms used by DOS Panel Physicians are different than what USCIS Civil Surgeons use:
Medical Examination for Immigrant or Refugee Applicant (Form DS-2054) Vaccination Documentation Worksheet (Form DS-3025) Medical History and Physical Examination Worksheet (Form DS-3026) Tuberculosis Worksheet (Form DS-3030)

Yes, it is.  Even EAD/AP is taking around 8 months currently.

If you are trying to evaluate doing a K-1 vs CR-1, this is the main reason to favor CR-1.

Several months?  Try TWO YEARS, lol.  Most green card interviews are taking that long now, nationally.

A properly and timely filed AOS (I-485) grants a period of authorized stay until a decision can be made following the interview.

Your K1 is voided the moment you enter the US. You're then given a 90 day allowed stay. In that period you have a legal status. After that and until you get your greencard you don't have a legal status but you're authorized to stay while your application is processed. That's for the immigration side of it.

For the IRS you're a legal resident already and might also be for your county ( that varies by state as to when somebody is a legal resident ).
