I have just recently filed for the K1 Visa. My fiancee was offered a job for the company I work for but they want her to start in two or three months. Would she be able to take the job and go back to her country for the interview? Or will she be denied entry?

Not enough information. Who is the USC? In what country is the job? Under what status would she work?

Facts are cheap...knowing how to use them is precious...

YES, based on the timeline you mention. If you just filed for K1, it will be at least 3 - 6 months from filing date before you will be approved for interview, then time before interview for K1, then time before she comes to USA from her home country to get married. I am assuming you mean you are US citizen, living in USA, and working in another country and that your company in that country has offered your finance a job, so can she be free to travel during this process and yes she will be as long as she has visa of other kind to travel on. BUT remember that once she interviews for K1 and receives it the USA embassy will take away any other current visa she may have in her passport and cancel it, and then place K1 in place. Then the clock is ticking you have 90 days to get her to USA and get married before it expires and once she comes to USA on the K1 she is there to stay until you marry and then file AOS/AP/EAD forms, which then it is about a 45-60 day wait on the AP if going fast on processing, once she has AP she can travel in and out of USA no problems.
