When they say each applicant do they mean we both need to complete (Petitioner and beneficiary) or when they say applicant are they just referring to the beneficiary?

For the I-134 am I able to sign it then scan it and email it to her signed? Or does it need to be a wet signature? I will not be present the day of the interview.

Is there more information about what they mean by job letter?

For the bank statements how far should they go back?

Applicant = the person applying for the visa.

I-134 is only signed by the sponsor

Bank statements needed if you need to sponsor based on assets instead of income.  If so, about a year would probably be fine:  one statement per quarter, 4 statements.
