If you arrived as a K1 visa do you still need to file I-130 or just the I 485, AP EAD and affidavit?

If you married within the 90 days, no need to file the I-130, but yes to the others.

Separate the three packets with "rubber band or fasteners" and then submit them together in the same envelope to the Chicago Lockbox: https://www.uscis.gov/forms/filing-guidance/form-filing-tips An example of the optional cover letters:
