We elected to apply for a social security card  thru the I-765 application. When is it expected to be processed and sent out? after biometrics or after AOS interview?

After you received the work permit. If your LFO is fast and you get the Greencard before the EAD then you have to go to SSA yourself.

After Form I-765 is approved.

If Form I-485 is approved before I-765 is adjudicated then you'll have to go in-person to the local SSA office with the GC and submit SS-5 form.

I just came across this for new AOS applicants: https://www.uscis.gov/news/news-releases/uscis-expands-partnership-with-social-security-administration

See page 2: https://www.uscis.gov/sites/default/files/document/forms/i-485.pdf
