I didn't work for the last 2 years while overseas. I came back to the US last year and got a job in December. I still have that job and make very good money - over 3 times the 125% poverty guideline requirement. I did not use a joint sponsor as I did not have the option. In my research, it's 50/50 opinions on whether or not I will need one. One camp says prior year tax returns are vital, the other camp says USCIS only cares about your current income. So we filed for AOS with only my income. I would like to change jobs to a similar pay structure. There is a chance that my income would be slightly less but still over 2x the poverty guideline requirement.

 

Hypothetically, let's say USCIS is going to approve my I-864 with my current income: would changing jobs now hurt my situation? Is staying in the same job for a long period more important, or is having higher income more important?

If your income would only be slightly less, then it would not make much difference whether you switch over to that new job or not.  Your timeline says your spouse filed for AOS just last month.  It could take a year or so before you get to the AOS interview.  If you change jobs now and stay at that new job until the interview, your job tenure would not even be a concern.
