Co sponsor household guideline question

My earnings for 2020 was 0 so I am choosing a co sponsor. Me and the applicant (my wife) have 2 children who are US citizens. The co sponsors earnings for 2020 were around $26,000 which is higher than the $21,775 for a 2 person household size. Do our children count as part of the co sponsor's household size?

No they would not count, but the family of the co-sponsor or anyone listed on their taxes would be counted in household size.

If the joint sponsor is single, and there is only one immigrant, their household size is 2.  However, that income is pretty low.  I would find somebody else with a better income.

You mention your and your potential sponsor's 2020 income, but what is your and their "current income".  Unless self employed, current income does not come from a tax return.  You could make any amount last year, and have a different or zero current income NOW.

Their income is still the same for this year. I was denied over 4 years ago because the sponsor had a dependent. Now the joint sponsor is single with no dependents is it really possible to be denied even though it surpasses the 125% poverty guidelines by $6000?

Yes.  It's a judgment call, not a goal line.  They are going to judge based on the totality of circumstances, not just exceeding a number on a page.

Would it be wise to add a second joint sponsor who makes around the same as the present joint sponsor? I see that a second joint sponsor is usually added when the applicant is being accompanied by others but I wonder if it's possible to have 2 for 1 applicant in order to improve chances of approval.

Not "usually".  "Only".  An individual applicant can have only one joint sponsor.
