My lawyer uploaded an affidavit of support on ceac on 8 January 2020..

My parent took the info  and went to the lawyer i wasnt there as i wasnt feeling so well. so i didnt know.

I want to know if the lawyer used 2018 tax return information on the affidavit or the 2019 tax return information. How do i find out ?

On Part 6, 24A in affidavit of support it does say  Most Recent. Tax Year: 2018. Income $29,781.00 ..  and on top part 6. #20. It says current annual income $36,000.00..   does that mean he used 2019??

Unless you are self employed, current income is calculated by annualizing income from a pay stub, not a tax return.  Tax returns are history.  Pay stubs are current.  Ask the lawyer.

If i have the interview in January 2021.  Would they be checking pay stubs for the year 2019 or 2020 ?

A pay stub shows current income or the most current income, so the only important pay stub is the latest one.  Get this idea out of your head about "which YEAR?".  Years are about information from tax returns.  Current income means RIGHT NOW, not any calendar year.

But many people lost jobs due to covid-19 so what if there is no current paystubs. And theres unemployement money ..

And if theres no use of tax returns why do we need to upload them ? And they ask for recent ones too.. ! ?

There is use for tax returns, but they are about the past, not the present.  If your sponsor is currently unemployed, then their current income is not stable and will not be ongoing for long enough to qualify.  You'll need a sponsor with qualifying current income from an actual current job.  Please be clear about the sponsor's current income.  Is it from a job or from unemploymet?

The joint sponsor lost his job in November 2020.. the latest paystub i have is from November 2020.. and those paystubs are from the actual job..  nothing after that. Because now they started unemployement money. Now in december 2020..  And i m most likely going to have an interview in January ...

Then the pay stubs cannot be used as evidence of current income.  I see the affidavit of support was submitted in January, and you originally asked how to know which tax return the attorney used when completing it.  Ask the attorney.  Get a copy of the affidavit.
