OP: Send them everything they want and more, if you have it.

Also, visit and spend more time with her. For a couple who's been married for 5 and a half years, you've spent very little time together in real life and obviously the CO finds that suspicious.

Even arrange marriages can be for immigration purposes per USCIS.  It has happened, don't kid yourself

   Only seeing spouse a couple times in 5 years sounds strange.

Spousal visa applications from Vietnam are being scrutinized more than usual these days because of the marriage fraud ring in Texas that was just busted, almost 100 people were arrested a few days ago.  You should go visit your wife a few more times and submit all the evidence they asked for plus more from the additional visits.  Also you need more co-mingling of finances, joint credit cards, bank accounts, wills, life insurance, health insurance, etc.  There is so much more evidence you could have submitted.  Any spousal visa from Vietnam will be viewed under a microscope because of all the fraud.  If it's real you will be okay but it may take some additional work and evidence and time.  Good luck!
