From what visa your wife want to adjust the status from?

If she is legally earning the income, then technically yes. Although, is there a reason you need to do so? The initial I-864 filed with the I-485 would need to at least meet the minimum requirements in order to get to the interview stage.

The IO makes the final call, but unless there has been a change in circumstances (i.e. you no longer work), generally it's just complicating matters if your income is sufficient by itself.

No form is needed for adding the income of a spouse as the intending immigrant (normally it's an I-864A). She does need to show evidence of the income (pay stubs + employment letter generally), as well as evidence that it will continue from the same source (generally an employment letter stating it is a permanent position is sufficient).

If you want to have a new I-864 with both incomes ready, that's fine. But no need to present it unless asked.
