My fiancè is going to visit me in summer after submitting our k1 petition.since the CO don't look at evidences in day of the interview in the high fraud countries, Is that going to help me in the interview day? 

My fiance only visited me once before sending the petition and she stays 10 days with me

It certainly won't hurt you but even in your own words the COs don't appear to review say of interview submitted evidence even though we have no idea what consulate she will be interviewed at

The consulate has a copy of the I-129 petition that they review prior to the interview. Within the petition, you should have pictures or other evidence of when you guys met in person. If you provide pictures, they should have a date and a small description on the back. Even though they may not seem to look over the evidence during the interview but they definitely look over it before.
