Don't really know for sure if I can make it the 16th of may, just wondering how far out the next one would be. Have their been any avaible ones since May 18?

When I booked a week ago, the next available date after the 18th of May was the 23rd...I'm not sure if that would still be available though...you're probably going to be looking at June.

Even if you won't be ready to move by interview, you have 6 months from your medical date to immigrate so that's loads of time!  

 

And going against the grain here, as a Canadian, if your boss denies you the time off, give your two weeks and deuces.  Chances of denial at Montreal is slim if you have all your paperwork in order and aren't originally from a high fraud country.

Okay, so how much time have we got to move my fiance to the US after she's got the K1 visa?

 

I'll probably just have to keep on checking back on the appointments until I will get my lucky day!

6 months from medical date for her to immigrate, aka move.  She has 10 years to move her things.  1 year to import a vehicle.
